Stir fried Chicken with Cashew Nuts
To make a good Thai cashew chicken is important to create balance flavors of seasonings, and enough of stir fry sauce that it will coat the chicken.
Ingredients
- 300 g chicken ( thigh or breast)
- 50 g cashew nuts
- 1/2 tbs flour for coating
- 1/2 tbs rice flour or corn flour for coating
- 3 red dried chilies (cut,remove the seeds out)
- 400 ml oil for deep fried
- 1 onion
- 1 clove of garlic
- 3 brown mushrooms
- 3 spring onions
- 1 cup of pineapple
- 1/2 of carrot
- 1/3 of red bell pepper
- 1/3 of green bell pepper
- 1/2 tsp salt
- mushroom soy sauce
- light soy sauce
- brown sugar or palm sugar
- Thai chili paste
Direction
- Slice chicken marinate with salt and pepper
- Mix rice flour and flour into the mixing bow, coat the chicken with flour
- Deep fried cashew nuts,red dried chilies and chicken until golden brown (one at a time)
- Cut all kind of vegetables, mushroom, pineapples
- Vegetables oil on the pan, add chopped garlic, Thai chili paste( low heat) light soy sauce and palm sugar,mushroom soy sauce.
- Add chicken,onion,carrot,red and green bell peppers,cashew nuts and spring onion.
- Serve with fried dried chili. .
