Tom Kha Soup
Tom Kha Soup ( Coconut galanga soup) ต้มข่าไก่. Chicken coconut soup is a common versions of Tom Kha in Thailand. It is a soup of chicken simmering in a light coconut broth with the aromatic of galanga and lemongrass.
Ingredients

  • shrimp,chicken or tofu
  • 5 slices of galanga
  • 2 lemongrass
  • 1 shallot
  • 1/2 onion
  • 1 clove of garlic
  • 2 red or green chilies
  • 1/2 tsp salt, 1 tbs fish sauce
  • tomato, mushrooms, cauliflower
  • tamarind sauce (optional)
  • lime, kaffir lime leaf
  • coriander (cilantro)

Direction

1) Slices chicken or tofu,clean seafood marinate with salt and pepper.
2) Bring coconut milk to a boil.
3) Slice Lemongrass, galanga, ginger, peel garlic, shallot, kaffir lime leaf in the pot.
4) Bring to the boil until flavor and aroma from the herbs about three minutes.
5) Add chicken or tofu or shrimp ( Shrimp gets cook very quickly,look just change the Colors)
6) Add cauliflower, tomato, mushroom
7) Add fish sauce, palm sugar, tamarind sauce off the heat
8) Lime juice, chili to taste, garnish with coriander and chili.
