Red Curry ( แกงแดง, แกงเผ็ด)
This type of curry based on coconut milk and red dried chillies. The color comes out creamy bright red.A popular red curry dish in Thailand is “Chicken red curry (แกงเผ็ดไก่ ) and Red curry with roast duck ( แกงเผ็ดเป็ดย่าง) serve with thin rice noodles (ขนมจีน) and steamed Jasmine rice. This recipe features Tofu and pineapple but it could also be prepared with beef, pork,duck,seafoods or chicken. Also ingredients are not exactly fixed any kind of vegetable can be use,Thai bamboo shoots and Thai eggplant are really popular in Thai traditional dishes.
Ingredients
Red curry paste
- 5 dried chili (cut,remove the seeds out and soak in the water)
- 2 Lemongrass
- 1 shallot
- 1 onion
- 1 slices of galanga
- 3 clove of Garlic
- 1/2 tsp salt
- 1/2 tsp cumin ( toast)
- 1/2 tsp coriander seed( toast)
- 1/4 tsp shrimp paste
- Tofu
- coconut milk
- palm sugar
- salt or fish sauce
- Pineapple
- bamboo shoots
- red spur chili, kaffir lime leaf
- Thai sweet basil
- Cut tofu into a small squares
- Warm vegetable oil in the pan
- Add red curry paste over low heat until fragrant about a few minutes.
- Add coconut milk 3 tbs ( cream on the top of the can)
- Add tofu and pineapple and bamboo shoots.
- Add coconut milk ( low heat) add fish sauce,palm sugar to taste.
- Red spur chili and kaffir lime leaf and sweet basil for decoration.
- Serve with jasmine rice or thin rice noodles.
